Makes 1 1/2 cups

1 cup mayonnaise

2 Tablespoons cornichons, chopped

3 Tablespoons flat-leaf parsley, finely chopped

1 Tablespoon capers, chopped

1 Tablespoon dijon mustard

1 Tablespoon tomato paste

1 teaspoon cayenne pepper

1 teaspoon kosher salt


Mix together all ingredients and store in the refrigerator until ready to use.  Will keep several days.  This is a classic sauce that works with almost any kind of fish or seafood.
